A View From the Kitchen and our Farmer Partners

Happy End of January
The freeze left as soon as it came.
  1. We have seen less zucchini because of the quality decrease from the freeze but is starting to recover in the field
  2. Broccoli is Unbelievably Beautiful!!!  You will see a lot of these in your vegetables in the next couple weeks
  3. Citrus is also starting to arrive from the farms we will start to figure out how to work it into the seasonal fruit in the next couple weeks.  This is important because we have not had much organic citrus for almost a year due to most off season citrus comes from outside of the country and there was a bug found in transportation causing spraying of chemicals making all inbound citrus non-organic.
  4. Cherry/Grape Tomatoes still are not of quality and we have seen farms remove them from shipments for these reasons.
  5. Colored Bell Peppers are coming down in price so expect to see some now only on your Vegan Vegetable Pizza and in your Hummus but in the Seasonal Veg.

January 20-Feb 1st

Did you Know Fun Fact:
Why do we use 100%  Grass Fed Beef?

  1. The majority of cattle in America are raised only in the beginning and end (called started and finished in grass) while primary growing years they are confined to feeding areas and fed a diet of grain and corn which is unnatural to them.
  2. Our Supplier Double Check Ranch has 100% Grass Fed in their free range cattle where they roam around hundred of thousands of acres and forage for the naturally sweet naturally occuring grasses plentifully available in south eastern Arizona.
  3. Research has shown that grass fed sustainably raised beef is the healthiest cows and the most humane way to raise cattle.
  4. Your beef is freshly single cow butchered and brought to our kitchen within 4 days.  We know the number of the cow and the meat is not mixed or dyed.
  5. Now for the Nutritional reasons:
  6. Less fat than grain fed and fewer calories - so people looking to keep less fatty beef in their diet can choose this option.
  7. Difference in Fatty Acid Composition seen in Grass Fed
  8. Lower Monounsaturated fat
  9. Same amount of Omega 6 Polyunsaturated Fats - essential for Growth and Development - however too much causes inflammation
  10. 5X Omega 3’s (the really good Omegas) -Helps Increase Plasma and Platelets
  11. 2X Conjugated Linoleic Acid (CLA) - Increasing Antioxidants, Contains Less Cholesterol Elevating Compounds and Increased Vitamin A & E

If you do eat animal protein it is important to know how and what they eat because you are eating that too.

If you are a vegetable protein consumer then it is also important to know where and how your vegetables are grown.

Proof that we are what we eat AND we are what we eat eats too.

How we treat animals impacts how healthy they are and subsequently how we treat each other.
